Brunswick Stew

Serves 6-8

2 T olive oil

½ cup diced celery

½ cup diced onion

1/3 cup diced carrot

2 garlic cloves, minced

¼ t cayenne pepper

½ t ground cumin

2 T tomato paste

1 can fire roasted tomatoes

1/3 cup barbecue sauce

1 T hot sauce

1 T brown sugar

1 T Worcestershire sauce

4 cups chicken stock

1 cup frozen corn

1 cup frozen lima beans

1 russet potato, diced

1 lb. smoked/pulled pork*

Salt and pepper to taste

Add the olive oil to a large pot or Dutch oven over medium heat. Add carrot, celery, onion and garlic. Season with salt and pepper and cook for 5-7 minutes or until softened.

Add the cayenne and cumin and stir for 1 minute. Add the brown sugar and tomato paste. Stir and cook for 1-2 minutes. Add canned tomatoes, stock, barbecue sauce, Worcestershire and hot sauce. Season with salt and pepper if needed and bring to a simmer. Add potatoes, corn and beans. Return to simmer and cook for 15 minutes or until potatoes are tender.

Add the pulled pork and break it apart. Cook for 5 minutes or until pork is warmed through. Taste and season as desired with salt and pepper.

Serve in a warm bowl garnished with a drizzle of extra barbecue sauce.

*This can be made with any cooked meats such as ground pork, chicken, sausage, or beef. Grab some pre-cooked meat from a local BBQ spot or shred a store-bought rotisserie chicken in a pinch!
