Bratwurst Tacos

4 bratwurst
4-8 taco-sized tortillas
1 bell pepper
1 medium red onion
4 slices cheddar cheese
From the Pantry
Dijon mustard (to taste)
1 T olive oil
Preheat grill to 400F.
Dice pepper and onion and add to a skillet with 1 T olive oil. Season with salt and pepper. Cook on the grill for 15-20 minutes or until softened to your liking.
Cut the casing off the bratwurst. Separate sausage in half (for small tacos) or leave whole and roll into balls. Place each ball in the middle of a tortilla and press it out flat as close to the edge as possible.
Grill meat side down for 6-10 minutes or until golden brown and mostly cooked through. Flip and top with cheese and cook for an additional 2-4 minutes or until sausage is cooked and cheese is melted.
Serve immediately with a drizzle of mustard and topped with sauteed peppers and onions.
