Chorizo Burgers

Five Ingredients

½ lb chorizo

½ lb ground beef

4 slices of pepper jack cheese

2 ripe avocados

4 hamburger buns

From the Pantry

4 t Dijon mustard

1 T olive oil

Using a fork or spatula combine the ground beef and chorizo in a bowl. Form into 4 ¼ lb. patties. Season with salt and pepper.

Add olive oil to a skillet over medium heat and add the burgers. While they cook on the first side, halve, pitt and scoop the avocado flesh from the skin. Season with salt and pepper and smash to desired consistency. The riper the avocado, the easier this will be.

Flip the burgers after they are browned and cooked about halfway through. Cook for 4-5 minutes more or until almost cooked through (you should cook to 155-160 F if using pork chorizo). Add a slice of cheese to each patty and tent with foil to melt quickly.

Toast the buns in a warm oven. Spread ¼ of the avocado on the bottom of the bun. Add a burger and a t of Dijon of mustard to the top bun. Spread the mustard on the top bun and lid the burger.

Serve immediately with fries or chips and salsa. Add onion, tomato, lettuce etc. as desired.
