Everything Salmon with Cream Cheese Mash

Five Ingredients

4 six-eight oz salmon filets

1.5 lbs baby red potatoes

1 bunch scallions

8 oz softened cream cheese

¼ cup everything bagel seasoning

From the Pantry

2 T olive oil

Preheat the oven to 425 F on convection if possible.

Meanwhile, cut the scallions into thin dice. Set aside

Cut the potatoes in half and place in a pot of cold water and season with salt. Bring to a boil, reduce to a simmer, and cook until potatoes are fork tender (about 12-15 minutes). Reserve about ½ cup of the cooking liquid.

Drain the potatoes and return to the pot over low heat. Add the cream cheese, scallion whites and light greens (reserve the dark greens for garnish), half of the cooking water and salt and pepper to taste. Mash potatoes and add more seasoning and cooking liquid as needed to reach your desired taste and consistency. Cover and set aside.

Lay the salmon on a baking sheet and drizzle with olive oil. Season with salt and pepper then coat with everything bagel seasoning. If your everything seasoning has salt in it, be mindful of how much salt you add initially. Bake for 10-15 minutes or until salmon is cooked to your liking.

Serve salmon filets atop a bed of mash and garnish with the scallion greens.
