Fajitas Dish Guide
Five in 25 Series
Serves 4
Five Ingredients:
1 lb chicken breasts or thighs (or can use pork or beef)
1 large bell pepper
1 red onion
1-2 limes
Fajita dinner box kit (includes seasoning, tortillas and sauce)
From the Pantry:
2 T olive oil
Slice the onion and pepper into ¼ strips as evenly as possible. Slice the chicken into even pieces slightly larger than bite sized so they don’t overcook too quickly. Heat 1-2 T of olive oil in a skillet over medium high heat. Add the chicken, spread in a single layer, and cook for 3-4 minutes or until browned slightly and about halfway cooked. Turn chicken over and add the peppers and onions and toss/stir to combine them. Add the fajita seasoning and toss/stir to combine, reduce heat to medium, cover and cook for 5-7 minutes until the veggies pick up a bit of color from the pan and are beginning to soften but still have a bite.
Turn off the heat and squeeze over the juice of a lime. Serve in warm tortillas with the sauce provided, hot sauce of choice, cilantro and/or cheese.
Pair with black or refried beans, Mexican rice or chips and salsa for a full meal.
