Miso Cod

Five Ingredients
4 six-eight oz. cod filets
¼ cup sake
¼ cup mirin
¼ cup white miso paste
3 T brown sugar
Preheat oven to 450F. In a small saucepan add the sake, mirin, miso and sugar. Bring to a simmer and whisk to combine. Reduce slightly.*
Brush cod filets with miso glaze and bake for 12-15 minutes or until cooked to your liking. Optionally you can turn on the broiler for some extra caramelization on the fish in the last couple of minutes. We also like to brush the fish with the glaze again halfway through cooking.
Serve garnished with sesame seeds and/or green onions along with white rice or vegetables for a complete meal.
*If you have time, cool this marinade and pour it over the fish and marinate up to 24 hours in the fridge. This will deepen the flavor considerably; however you can prepare the fish right away if you’re in a hurry.
