Shrimp Foil Packs

Five Ingredients

1 lb peeled and deveined shrimp

16 oz cherry or grape tomatoes

Fresh dill (to taste)

Dry white wine

Feta Cheese

From the Pantry

1 clove of garlic per pack

1 T olive oil

Tear a strip of aluminum foil that is about 1’ x 2’. Add a handful of shrimp and a handful of tomatoes to one side of the foil. I lb of medium shrimp is about 40 shrimp. I would say to serve this as an entrée portion I would do half the shrimp per pack. As an appetizer, maybe ¼ of the shrimp per pack.

Tear on a few pieces of fresh dill and add 1 crushed clove of garlic. Season with salt and pepper and fold one half of the foil over the shrimp. Beginning in one corner, fold and crimp the edges to form a foil pouch. When you get to the other end, pour in about 1 T of the wine and crimp to seal.

Bake at 450F for 12 minutes. Immediately remove from oven and cut open to release steam. Crump the feta into the steaming pouch and gently close it back up to soften the cheese for a couple of minutes.

Serve as is with crusty bread or over pasta or rice.
