The Avocado BLT

Avocado BLT Sandwich

Five in 25

Serves  4

Five Ingredients

12 strips thick cut bacon

3-4 vine-ripened tomatoes

8 slices of hearty white bread

1 very ripe avocado

1 head of red leaf lettuce

From the Pantry

1 t water (optional)

Salt and Pepper to taste

 

Cook the bacon on a baking tray for 15-20 minutes at 400 degrees or until cooked to your liking.  Drain and cool on paper towels.  Cut tomatoes as desired.  Wash and tear lettuce into portions.

Brush the bread with the bacon fat and toast for 3-5 minutes in the warm oven.

Core and smash the avocados as fine as you like, seasoning with salt and adding a dash of water for consistency if needed.

Assemble the sandwich but adding a spread of the avocado, followed by the tomatoes.  Season the tomatoes with salt and pepper.  Add 3 slices of the cooked bacon.  Top with the lettuce and more avocado spread.  Cut in half and serve with desired side(s).

Dish Notes:

Sub vegan bacon and check the bread for dairy additives to make this vegan. Feel free to use both mayo and avocado for extra richness but that would be 1 too many ingredients for us! Bacon cooking time can be highly variable based on thickness and oven temperatures so make sure to check on it regularly. The avocado will oxidize (turn brown) quickly so make sure to smash it right before making the sandwiches.
