Chopped Cheese

Chopped Cheese Dish Guide

Five in 25

Serves 2

Five Ingredients

1 lb ground beef

4 slices American cheese

1 small yellow onion, thinly sliced

1 tomato, thinly sliced

1 loaf of French or Italian bread (about 12-14 inches long)

From the Pantry

1 T olive oil

2 T Dijon mustard

Slice the bread in half, leaving one edge intact as a hinge. Tear out a bit of the bread from the top and bottom to make room for the filling. Optionally toast in a hot oven for a few minutes. Spread the bottom with the Dijon mustard and set aside.

Form the ground beef into two ½ thick, oblong patties.

Heat oil in a large skillet over medium high heat. Add the patties and scatter the onions around them in the skillet. Season with salt and pepper and cook for 5-6 minutes on the first side. Flip and cook for 2-3 minutes more then use a sturdy spatula to chop the patties up into chunks, incorporating the onions with the chunks as well.

Lay on the cheese and turn off the heat, allowing the cheese to melt gently over the chopped patties.

Spoon the chopped beef and cheese filling and lay on the tomatoes. Top with any additional condiments as desired (ketchup, mayonnaise, pickles, lettuce, etc) and fold the sandwich together tightly (optionally you may use foil or parchment paper to help form it and hold it together). Slice in half and serve with chips, fries or side of your choosing!
