Turkey Burgers with Pickled Onions

Five Ingredients
1 lb ground turkey (85% lean), formed into 4 patties
Store made guacamole*
4 slices pepperjack cheese
4 brioche buns
1 red onion
From the Pantry
¾ cup red wine vinegar
1 garlic clove
1 T olive oil
Peel and slice the red onion thinly. Add it to a bowl or container (preferably with a lid). Add the red wine vinegar to a sauce pot over medium heat along with ¼ cup water. Season with salt and pepper and crush the clove and add it to the mixture. Bring it to a simmer and then pour it over the sliced onions. Make sure they are covered in the mixture and set aside. They will be ready in 20 minutes but are even better after being refrigerated overnight.**
In a large skillet over medium heat add the olive oil and the burger patties. Season with salt and pepper and cook for 4-5 minutes a side or until cooked through (160 F). Add the pepper jack cheese and cover with a lid or piece of foil to melt the cheese.
Toast the buns in a warm oven. Assemble the burger by spreading the guacamole on the toasted bun, piling on the pickled onions and then the burger. Obviously, plenty of other toppings are welcome here such as lettuce, tomato, bacon, etc.
*If you prefer to avoid pre-made guacamole you can just use a ripe avocado and smash it up and use it as a creamy base.
**Most quick pickles use a bit of sugar or honey but we ran out of ingredients! And we really think the natural sweetness in the onion balances the acidic vinegar well but if you like a sweeter finish to your pickles add a dash of white sugar to the pickle brine.
