Pepperoncini Beef Sandwiches

Five Ingredients
4 sub/French rolls (6-8” long)
1.5 lbs ground beef
12 oz jar sliced banana peppers
8 slices mozzarella cheese
1 packet Italian dressing mix
Drain off the liquid from the banana peppers, reserving a couple tablespoons to the side.
Cut the bread in half, leaving one edge connected if possible (so the rolls open like a book). Carefully scoop some of the excess bread out of the middle of the rolls.
Preheat oven to 400F.
Heat a skillet over medium heat and add the beef. Brown and crumble for 4-5 minutes or until meat is cooked through. Drain excess fat if desired. Add in the banana peppers and use spatula to chop into small pieces if possible. Add the Italian seasoning mix along with the banana pepper brine and 1/3 cup water. Stir and bring to a simmer. Reduce heat to low and simmer for 10-12 minutes or until most of the liquid has evaporated. Taste and season as needed with salt and pepper.
Scoop the beef mixture into your halved rolls and top with two slices of cheese each.
Place the stuffed rolls on a baking sheet and bake for 5-6 minutes or until cheese is melted and bread is lightly toasted.
Serve immediately. Optionally you can wrap the subs in aluminum foil or parchment paper to help them keep their shape and stay warm.
