Pork Ramen Bowls
Serves 3-4
Five Ingredients
2 packs ramen noodles (any flavor or brand)
2 eight oz pork chops, at least ½” thick
5-7 large button mushrooms, cleaned
1 bunch scallions
2-2.5 cups beef stock
From the Pantry
2 T olive oil
Stem the mushrooms and slice them very thinly. Mince the scallions and divide the whites/light greens from the dark greens.
Add the olive oil to a skillet over medium high heat. Dry the pork chops thoroughly and season with salt and pepper. Cook on each side for 3-5 minutes or until golden brown. Cook to at least 130F and it will carry over cook to medium or cook to your preferred doneness. Remove pork chops and set aside to rest.
Add the mushrooms in a single layer and cook for 1 minute. Add in the light parts of the scallions. Add in the beef stock and water and scrape up the fond off the bottom of the pan. Add in 1 seasoning packet from the ramen packs along with both packs of noodles. Bring to a simmer and break noodles up and cook per package directions.
Return any resting pork juices to the skillet and season with salt and pepper as needed. If dish is already too salty, add a splash of water.
To serve, slice the pork chops thinly. Bowl up some noodles and broth. Lay a few slices of pork over top and garnish with green onion greens.
Substitute the pork for any protein of your choice. Feel free to add any quick cooking/leftover veggies as well.
