Crispy Cod with Yogurt Dill Sauce

Five Ingredients
1 lb cod or other firm, white fish
8 oz plain Greek yogurt
1 T fresh dill, minced (plus more for garnish)
1 lemon
1 package microwaveable brown rice blend*
From the Pantry
½ cup flour
1 t Dijon mustard
¼ cup olive oil
Cut the cod into 2-3 portions.
Season with salt and pepper and coat all sides in the flour and set aside.
Mix the Dijon, dill, yogurt and juice of half the lemon in a bowl. Season to taste with salt and pepper and whisk to combine.
Add the olive oil to a skillet over medium to medium-high heat. Cook the cod 3-4 minutes on the first side or until lightly browned. Flip and cook for 3-4 minutes more or until cooked through to your liking (about 130-140 for medium).
Serve cod atop a bed of the rice blend topped with the yogurt sauce, fresh dill sprigs and a wedge of lemon.
*If you have an aversion to using microwaveable rice, use par-boiled brown rice and cook per package directions or use another grain such as quinoa or farro.
