Fajita Chicken Quesadillas

Five Ingredients

1 lb. chicken breasts

2 cups cut peppers and onions*

1 packet fajita seasoning

8 oz Monterrey or pepper jack cheese

4 large burrito-sized tortillas

Olive oil (as needed)

Slice the chicken into large bite-sized pieces and shred the cheese.

Add 1 T olive oil to a skillet over high heat and add the chicken. Sear for 2-3 minutes and then add the veggies and toss. Cook another 3-5 minutes, stirring often until chicken is cooked through and veggies are starting to soften. Add the fajita seasoning and a splash of water as directed on the seasoning packet. Stir everything to combine.

Add ¼ of the cheese to one side of a tortilla. Add chicken and veggies as desired. Fold in half and press thoroughly to evenly distribute the filling in the tortilla.

Add a drizzle of olive oil to a skillet over medium heat and lay the tortilla in. Give it 3-4 minutes to get golden brown and then flip, adding more oil if needed. Cook for 3-4 minutes more or until cheese is melted and tortilla is golden brown. Do not do this on too high a heat or your tortilla will burn before the filling is melted.

Serve immediately with salsa or sour cream.

*You can usually find pre-sliced peppers and onions in the produce area of your grocery store. If not, buy them both and slice them thinly and call this a “6 in 25” 😊
