Jalapeno Popper Stuffed Chicken

Serves 3-4

Five Ingredients

2 eight-ten oz boneless, skinless chicken breasts

8 oz softened cream cheese

4 oz cheddar cheese

2 jalapeno peppers

4-6 strips bacon

Preheat oven to 425F.

Grate the cheddar cheese and place it in a bowl. Remove the stems and seeds from the jalapeno peppers and finely mince. Add to the bowl with cheddar cheese. Add cream cheese to bowl and season with salt and pepper. Mix thoroughly.

Cut a pocket into the chicken breasts by laying the breast flat on your board and inserting a knife in the thickest part, parallel to the board, and carefully slicing open without cutting all the way through. Work carefully to open a pocket inside of the breast.

Season the chicken with salt and pepper and stuff the pocket with the cheese filling. Wrap both breasts in 2-3 strips of bacon and bake at 425F for 20 minutes or until chicken is cooked to at least 160F internally and the bacon is cooked.

Serve with a side salad, green veg or grain.
