Pasta with Chicken Sausage and Broccolini
Pappardelle with Chicken Sausage and Broccolini

Five Ingredients
8 oz dried pappardelle noodles
1 lb chicken sausage (any flavor)
1 bunch baby broccoli (broccolini)
6 oz pecorino Romano
1 cup panko breadcrumbs
From the Pantry
3-4 T olive oil
2-3 cloves garlic
Cook the pasta per package directions in boiling salted water. Reserve 1 cup of the cooking liquid.
While the pasta cooks, cut the broccolini into small pieces, leaving the florets mostly whole. Grate the cheese and cut the sausage into coins. Finely slice 2-3 cloves of garlic.
Add 1 T oil to a skillet over medium heat. Add sausage and broccolini. Season with salt and pepper. Sautee for 3-4 minutes or until sausage is warmed through and broccolini is bright green. Add the garlic and cook for 1-2 minutes.
In a separate pan, add 2 T oil and the breadcrumbs. Season with salt and pepper. Heat over medium heat, stirring often, for 3-4 minutes or until breadcrumbs are golden brown and toasty. Set aside.
Add the cooked pasta to the sausage mixture along with a splash of cooking liquid. Add most of the cheese. Stir vigorously to thoroughly combine the pasta, cheese and sausage together. Add more pasta water as needed to make the dish as saucy as you like. Taste and season as needed with salt and pepper.
To serve, bowl up plenty of pasta, sausage and broccolini and top with toasted breadcrumbs, more grated cheese and, optionally, fresh herbs like basil or tarragon.
