Shrimp Fra Diavolo
Serves 2-4
Five Ingredients
1 lb peeled and deveined shrimp
½ cup white wine
16 oz jarred marinara
1-2 t red pepper flakes
8 oz rigatoni or large, tube-shaped pasta
From the Pantry
2 garlic cloves, crushed
2 T olive oil
Bring a large pot of water to a boil and cook your pasta 1-2 minutes less than the package directions.
Meanwhile, ensure shrimp are thoroughly dry. Add the olive oil to a large skillet over medium high heat. Add the shrimp and sear for 2-3 minutes on one side. Season with salt, pepper and 1 teaspoon red pepper flakes. Flip and cook 1 minute more. Add the crushed garlic and cook for 30 seconds. Remove from the skillet and set aside.
Add the wine to the skillet and scrape up any fond and brown bits. Optionally add another teaspoon of red pepper flakes if you want the dish extra spicy. Allow the wine to reduce by half. Drain the al dente pasta and add to the wine. Add the marinara sauce and stir to combine thoroughly. Remove from heat and add half the shrimp and toss to combine.
Serve pasta topped with 3-4 of the remaining seared shrimp and garnish with green onions or parsley if desired.
