Smashed Chicken Tacos

Serves 4

Five Ingredients

1 lb ground chicken

2 roma tomatoes

1 bag shredded lettuce

1 bag Mexican cheese blend

1 soft taco dinner kit

From the Pantry

Olive oil as needed for cooking

Cut the tomatoes in half and remove the core and pulp. Dice the firm flesh. Set aside.

Take the soft taco shells and lay about 2 oz of the ground chicken in the middle of each one. Smash the meat flat and spread over the taco shell leaving at least ½” border around the edge. Sprinkle the taco seasoning packet over the meat. Repeat with 7 additional taco shells.

Add olive oil to a large nonstick skillet, griddle or flat-top over medium high heat, lay the tacos down on the meat side first and press down lightly to ensure good contact. Cook for 3-4 minutes and then flip. Cook for 2 minutes more or until shells are toasted lightly.

Top with the taco sauce from your kit along with the diced tomatoes and shredded lettuce. Add any other toppings and seasonings as desired and serve immediately. The taco shells will get firm and brittle after cooking so they need to be folded in half quickly after cooking or they will have to be eaten like tostadas.
