Chicken and Waffle Sliders

Serves 4-6
Five Ingredients
1.5 lbs chicken tenderloins or breasts cut into strips
1 package frozen mini waffles
1 package chicken breader of choice (such as House Autrey)
Pickles*
Hot Honey**
From the Pantry
Olive oil (as needed)
Turn your air frier or oven to 450 degrees F.
Drizzle a baking tray with olive oil. Bread the chicken thoroughly in the seasoned coating then lay on the baking sheet and roll around in the oil. Return to the breading and add a second coating. Shake off excess. Arrange on baking tray.
Bake for 12-15 minutes or until chicken is cooked to 160 F.***
Alternatively add a thin layer of oil to a skillet over medium high heat and pan fry the chicken for 4-5 minutes a side or until also cooked through.
Toast the waffles per package directions (we use the same oven as the chicken to make it easy).
To assemble, cut the mini waffles in half so you have two sets of two. Lay a tender on top. Drizzle with hot honey and add a couple pickles. Top with other waffles and serve immediately.
This would be a creative breakfast sandwich with great tater tots or a light lunch/dinner good with a simple side of your choice.
*We love hot dill pickles for the tang and heat but use any you like or skip altogether!
**Hot honey goes so well with the sweetness of the waffle and tang of the pickles but use regular honey or maple syrup as well.
***You will not get super golden chicken by baking it but it is easier and saves on calories. If you want crispy golden chicken, you will need to pan fry OR use pre-cooked frozen tenders for maximum crunch and ease!
