Spam Fried Rice

Five Ingredients

¼ cup soy sauce (to taste)

1 can Spam (we recommend low sodium)

1 cup fresh pineapple, diced

1 bunch green onions, diced

1 family pack of microwaveable rice (about 16 oz)

From the Pantry

2 cloves garlic, minced

2 T olive oil

Dice the spam, pineapple, garlic and green onions. Preheat a skillet or wok over medium high heat and add the oil. Add the spam. Stir-fry for 5-6 minutes or until browned. Add pineapple, green onions (save the dark green for garnish) and garlic. Stir fry for 2-3 minutes. Add the rice and season with pepper.

Add the soy sauce and continue to stir-fry the spam, pineapple and rice for 2-3 minutes more, until rice is warmed through and soy sauce is evenly distributed. Taste and adjust seasoning as needed.

To serve, place in a warm bowl and top with more scallions and some sriracha for heat if desired.
