Five Ingredients

6 oz ham steak, cubed

1 bell pepper, diced

3-4 green onions, diced (whites and greens separated)

8 eggs

6-8 oz pepper jack cheese, grated

From the Pantry

2 T olive oil

Heat a 10” non-stick skillet over medium heat. Add the olive oil followed by the peppers and onion whites. Season with salt and pepper and cook for 2-3 minutes or until they are beginning to soften. Add the ham.

Beat the 8 eggs thoroughly and add them to the skillet, being sure to evenly distribute the ham, peppers and onions around the skillet. Season with salt and pepper and sprinkle with most of the cheese. Place into a 375-degree F oven for 10-15 minutes or until the eggs are just set (cooked through).

Remove and garnish with the remaining cheese and scallion greens. Serve immediately with a spring green salad, roasted potatoes, or side of your choosing.
