Pulled Pork Mac & Cheese

Serves 4

Five Ingredients

12 oz cavatappi or elbow macaroni

12 oz evaporated milk

12 oz sharp cheddar cheese, freshly grated

½ cup panko breadcrumbs

1 lb. cooked pulled pork barbecue (homemade, restaurant or store bought)

From the Pantry

3 T olive oil

2 t Dijon mustard

Cook the pasta 1-2 minutes short of the package directions in lightly salted boiling water. Drain almost all the water (save about ½ cup). Return the pot to the heat over low and add the evaporated milk and cheese. Mix thoroughly until the cheese is melted and combined. Mixture should be slightly watery at this point.

Heat the pulled pork in the microwave and mix into the macaroni and cheese and set aside for 10 minutes to set.

Add the olive oil to a non-stick skillet over medium heat and add in the breadcrumbs. Toss to coat in the oil and cook, stirring frequently for 5-6 minutes or until they are golden brown and toasted to your liking. Season with salt and pepper.

Serve the pulled pork mac & cheese topped with a sprinkling of the toasted breadcrumbs.
