Pizza Stuffed Chicken

Five Ingredients

4 boneless, skinless chicken breasts

4 sticks of string cheese

4 slices of pepperoni (deli size: 3-4” diameter)

Pizza Sauce

Chicken seasoning blend of choice

Preheat grill to 400F.*

Use a pairing knife to open a pocket in the center of the chicken breast, cutting in from the thickest part and slowly opening up a hole in the middle being careful not to cut through the bottom or sides.

Roll a piece of pepperoni around a string cheese and stuff into the pocket in the chicken. You could also use freshly shredded mozzarella for this step. Spoon a tablespoon or so of pizza sauce into the pocket. Optionally use a toothpick or skewer to seal the chicken. Season generously with your preferred seasoning.

Grill 10 minutes per side or until cooked through to 160F internally. Serve with more warm pizza sauce for dipping and a side of your choosing.

*You can also bake these or pan-sear and finish in the oven but cooking times will vary based on the thickness of your chicken and cooking method.
